dark chocolate dairy-free muffin recipe

I have two words for you: Dark Chocolate.
I also have another word for you: Muffins.

What about if I add dairy-free?

Okay, if I don't have you hooked yet, I understand if you want to leave now. But if I do have you hooked, how would you like a recipe for yummy Dark Chocolate Dairy Free Muffins??

Don't worry, I gotcha covered. 🙌

We are fans of dark chocolate around here, but you can easily use regular grade cocoa powder instead of dark chocolate cocoa powder.
You can add in whatever you want to these: nuts, chocolate chips, dried fruit. We stuck with regular ‘ol muffins, but the choice is yours!
Also, if you aren’t on a dairy-free diet, feel free to use regular butter. Works just the same!


→ 1/2 cup melted non-dairy butter (we use Earth Balance)
→ 2 eggs
→ 1 tsp vanilla extract
→ 3/4 cup sugar
→ 3/4 tsp baking powder
→ 1/4 tsp sea salt (regular works fine, too)
→ 3/4 all purpose flour


→ Preheat oven to 350. Spray or line muffin pan.

→ Melt butter in the microwave, and in a large bowl mix butter, egg, sugar, vanilla, salt, baking powder, and cocoa powder. Add flour in last, then any mix-ins if you so choose.

→ Put batter into the muffin tins, around 1/2 to 3/4 full. Bake for 20-25 minutes, or until toothpick comes out clean. Let them rest for a few minutes in the muffin tin before removing to cooling rack.

Store in an airtight container. They will last for about a week.
