little eats | dark chocolate dairy free muffins

Have I ever mentioned how much I love chocolate? How about how much I love muffins?

Well here’s a hint to how much: like a lot.

So duh, of course I gotta try some chocolate muffins!

We are fans of dark chocolate ‘round here, but you can easily use regular grade cocoa powder instead of dark chocolate.

You can add in whatever you want to these: nuts, chocolate chips, dried fruit. We just stuck with regular ‘ol muffins, but the choice is yours!
Also, if you aren’t on a dairy free diet, feel free to use regular butter. Works just the same!


-1/2 cup melted non-dairy butter (we use Earth Balance)
-2 eggs
-1 tsp vanilla extract
-3/4 cup sugar
-3/4 tsp baking powder
-1/4 tsp sea salt (regular works fine, too)
-1/2 cup dark chocolate cocoa powder
-3/4 all purpose flour


-Preheat oven to 350. Spray or line muffin pan.

-Melt butter in the microwave, and in a large bowl mix butter, egg, sugar, vanilla, salt, baking powder, and cocoa powder. Add flour in last, then any mix ins if you so choose.

-Put batter into the muffin tins, around 1/2 to 3/4 full. Bake for 20-25 minutes, or until tooth pick comes out clean. Let them rest for a few minutes in the muffin tin before removing to cooling rack.

Store in an airtight container. They will last for a couple days to a week.
